Makes 6
Ingredients:
100g Raw organic Cacao Butter
5-10 tbs Raw organic Cacao Powder
3 tbs Raw Agave syrup
Organic pure peanut butter (no added oil, just peanuts)
handful of cacao nibs (optional)
Melt 50g cacao butter in a glass bowl over a pan of boiling water. Once it has melted, remove from the heat and add 5 tbs cacao powder and mix it until it reaches a smooth consistency. Add half the Agave syrup (or to taste, if you like it sweeter add more), once this is mixed in the mixture should be thick and glossy. Half fill some mini baking cups and pop in the freezer for 15 minutes to set. While that is setting, repeat the earlier steps with the remaining ingredients to make your top layer of chocolate. Once the 15 minutes is up and the bottom layer has set, pull the chocolates out of the freezer and place half a teaspoon of peanut butter in the centre of each baking cup and cover with the 2nd batch of chocolate, smooth the top off with a knife and sprinkle with few cacao nibs if using them. Place back in the freezer for another 15-20 minutes until they have fully set. Once set, remove from freezer, peel the paper cups off and store in the fridge. ENJOY!! :):):)
